        "Snowball" Cookies

        Ingredients:

        2 sticks margarine (or butter)
        1/2 cup powdered sugar
        2 cups all purpose flour
        1/2 teaspoon vanilla
        1 cup pecans ( chopped fine )

        Cream margarine and sugar together.
        Add other ingredients.
        Mix well and form into balls.
        Place on un-greased baking sheet and
        bake at 350 degrees for 20 minutes.
        Let cool and then roll in powdered sugar.

         



        Ice Cream "Snow"

        1 cup milk
        1 egg, beaten
        1/2 cup sugar
        dash of salt
        1 tsp. vanilla

        Blend the above well and add clean, fresh snow till absorbed.

    The above recipe may not be advisable
    in poor air-quality areas!!!



        "Snow" Ice Cream - Summer Version

        Ingredients:

        1 C Sugar
        2 t All-Purpose flour
        1/4 t Salt
        1 1/2 C Milk (whole)
        1 C (real) Whipping Cream "Do Not Whip"
        3 Eggs (beaten)
        1 T Vanilla
        3-4 C Ice (shaved or crushed)- "Shaved" ice works best

          1. Combine sugar, flour and salt in a heavy saucepan.
          2. Stir in milk and cream.
          3. Cook and stir over medium heat until mixture
             is thickened and bubbly.
          4. Cook and stir 2 minutes more.
          5. Remove from heat.
          6. Gradually stir about 1 c of hot mixture into the eggs.
          7. Return all of the mixture to the saucepan.
          8. Cook until mixture is bubbly, but "DO NOT BOIL".
          9. Reduce heat.
          10. Cook and stir 2 minutes more.
          11. Remove from heat.
          12. Stir in vanilla.
          13. CHILL, covered in freezer, until mixture begins to
              freeze, about 1 1/2 hours.
          14. Pour mixture over shaved or crushed ice in a bowl.



          "White" Christmas Treats

          Ingredients:

          3 cups Rice Krispies
          1 cup desiccated coconut
          3/4 cup powdered milk
          1/2 cup powdered sugar
          2 oz - mixed candied fruit, chopped
          2 oz - red and green candied cherries, chopped
          4.5 oz white vegetable shortning
          4.5 oz white chocolate chips

          Brush a 9 x 13" pan with oil.
          Line base and sides with parchment paper.
          Combine: Rice Krispies, coconut, powdered milk,
          powdered sugar, and all fruit in a large bowl.
          Chop up the shortening, place with the chocolate in the
          top of a double boiler over simmering water.
          Stir until mixture is melted and smooth.
          Combine chocolate and Rice Krispie mixture.
          Press into the prepared pan and refrigerate until set.
          Remove from the pan, allow to stand for 10 minutes.
          Cut into squares with a sharp knife.
          Makes 35 squares.

           



          Lemon "Snow" Bars

          Ingredients:

          3/4 cup butter
          1 1/2 cups flour
          1/3 cup powdered sugar
          4 eggs
          2 cups sugar
          4 tablespoons flour
          1 teaspoon baking powder
          dash salt
          6 tablespoons lemon juice

          Cream together butter, 1 1/2 cup flour, and powdered sugar.
          Pat in a 13x9x2 inch baking pan.
          Bake 18 minutes at 350 F or 325 F if using a glass pan.
          Beat together the rest of the ingredients and pour over crust.
          Bake an additional 25 minutes. Sprinkle with powdered sugar.

           



          "Snow" Fudge

          2 cups sugar
          1 cup light cream or evaporated milk
          1/2 cup butter
          8 oz. white confectionery coating, chopped
          1/2 cup flaked coconut
          1/2 cup coarsely chopped pecans
          1 teaspoon vanilla

          Place sugar, cream and butter into a heavy 3 quart saucepan.
          Cook over medium heat to 238 degrees F., stirring constantly.
          Remove from heat.
          Allow mixture to stand, without stirring for 10 minutes.
          Add confectionery coating. Beat until melted.
          Quickly stir in coconut, pecans, and vanilla.
          Pour into a buttered 8" square pan. Cool. Cut into squares.

          Makes 64 1-inch squares.



          "Melting" Moments Cookies

          Ingredients:

          1 c. butter
          2 c. flour
          1/2 t. vanilla
          1 egg yolk
          3/4 c. brown sugar

          1. Cream butter and sugar.
          2. Add egg yolk, vanilla, and flour.
          3. Mix well and form into little balls,
              placing them on an un-greased cookie sheet.
          4. Press down with a fork.
          5. Bake at 15 minutes at 375 degrees

           



          Christmas "Snow" Logs

          Ingredients

          1 banana
          Peanut butter
          Shredded cocoanut
          1 table knife
          A mixing spoon

          1. Cut banana in three pieces.
          2. Spread peanut butter all over each piece.
          3. Roll the pieces in coconut.

           



          Abominable "Snow" Cones

          Even if it isn't snowing in your hometown,
          your kids can still make ice cream snowmen!
          All you need is a few scoops of their favorite
          flavors and some candy decorations.

          1. On a cone, stack one scoop of vanilla ice cream
              on top of another scoop.
              (Pssst! A small bowl works great too!)

          2. Let your child cover both scoops with grated coconut.

          3. Now, he can add gum drops for eyes and
              chocolate chips for buttons. Let your imagination go wild
              This is your "Snowman".

          4. Yum! You've got an abominable snow cone!

    SnoVille Sno Cake

     

      To make a world famous SnoVille Sno Cake you can use your favorite cake recipe or a cake mix. To stay within the theme, use a white cake or you can use any flavor you desire. A two or three layer round is best for decorating it. Use whichever flavor of filling you like or use the same icing you intend to frost it with. To frost it, use regular icing or whipped cream frosting. Do the top in white and the sides in an icy blue. Pipe the top and bottom edges with either shells or stars. Top enhance the top, use shredded cocoanut or *edible glitter (see recipe below). Use a wide piece of blue ribbon around the side as in the picture above and decorate it with snowflakes. You may draw them on, rubber stamp them on, stencil them or use your computer to print some out. I think rubber stamped with embossing powder in a pearly glitter would be really pretty. If you own an air brush, you can use food coloring to spray on the sides to make a lacy pattern in which case, you do not need to frost in blue, just use blue in the air brush. Put some figurines of some sort on the top of the cake in the manner of the example and you have a "Sno Cake".

*Edible Glitter

    I got this idea from a cake decorating class I took many years ago in Southern California. You use the white of one egg and "paint" it one a sheet of aluminum foil with a clean paint brush or pastry brush. After it has thoroughly dried, you crunch up the foil, breaking the egg white up into small glittery pieces. You should do it over a pan or container of some sort as to not lose any. Sprinkle it on top the cake.

~~ Warning ~~

    There has been many reports of contaminated eggs. If you are concerned about that, you may check with a decorating supply store to see if there is a commercial edible glitter available. If not, use the cocoanut instead. It is available online at http://www.cookiecutter.com amd comes in several colors. Click on Edible Decorations, then on Edible Glitter.
